Carroll’s Corn began popping February 11, 1993. Founder Pat Carroll, a former teacher and swimming coach, found the need to venture off on his own after suffering swimming burnout. Still having the desire to stay in Rochester, MN so his wife could pursue her career as a hypertension nurse at the Mayo Clinic, Pat opened Carroll's Corn in downtown Rochester and soon became a favorite stop for Mayo employees and visitors.
Pat’s popcorn making skills came from many weeks to months to years of trial and error. Our caramel corn is Recipe #39. (And it has continued to be tweaked over the years.) When we first started, we drove to St. Paul and purchased caramel corn and cheese popcorn from Myron Peterson and CTC Popcorn Factory. Myron told Pat, “If you’re not going to use the very best ingredients, your customers won’t stick with you.” And he was right. After two years Carroll’s Corn started making heir own caramel and cheddar. Business quickly improved.
Family is very important to Carroll’s Corn. Pat’s oldest daughter Janna has worked at Carroll’s Corn for four years. Youngest daughter Tessa is 12, and she will start soon. Pat’s wife Carol Nash, her parents Betty and Oliver, and her brother Al, all help during the holiday rush. Manager Brian “Red” DeYoung’s daughter, Kristin, helped for three years, and Red’s wife Diane also helps during the Christmas season.
We keep a friendly, laid back atmosphere, making us a favorite hangout spot and earning us many devoted regular customers.
Growth is inevitable. We just keep getting busier and busier. Our popcorn is excellent, our customers are wonderful and devoted, and with our current top-notch staff Carroll’s Corn will only continue to get better and better.
